Wednesday...

1. I've had to ask myself twice already what day of the week today is. I am still deciding if I'm glad or mad that it's Wednesday. I think I'll lean more towards glad but ready to see Friday...

2. We went to see HAIR the Musical at the Winspear Opera House last night with the free tickets David won at a real estate function about a month ago.


-It was really funny but oh so raunchy! I was not expecting that at all.
-There is one part where the whole cast is COMPLETELY naked. NAKED. Buck naked. However the lighting kept it tasteful? If that can be tasteful.

Summary: Don't take your children to this one.

3. Modern Family comes back on tonight. I am ECSTATIC. I may or may not have had this reminder in my calendar. I think it's the BEST comedy on television.


4. Today is the first day of fall!! Yippee!! I cannot wait to bust out my boots and fall decor.



5. Today is a SPECIAL day in my family. It is both my brother and brother-in-law's birthday.

Rhett, thank you for being such a wonderful brother! I am so proud of the man you have become and how you continue to seek God's will for your life.


David (yes, his name is also David), thank you for loving and serving my family so unconditionally. You are a wonderful husband to my sister, father to my niece and nephew and the best brother-in-law!

Eating REAL Food

After reading the title of this post, you're probably confused. What food isn't real? Well unfortunately, the majority of the food we eat and buy at the grocery store is loaded with processed, unnatural ingredients.

We've been wanting to cut out processed foods for a while now but really didn't know where to begin. We found this blog as a great resource to get us started.

100 Days of Real Food.

This family made a 100 day pledge to cut out all processed foods! They have since done a couple other pledges but they share some great recipes.

Last night we made these fajitas and homemade-whole wheat tortillas. We were both pleasantly surprised by how delicious and filling these were.



Fajitas
Ingredients:

4 bell peppers, sliced (we used green bell and Anaheim peppers, but red or yellow would be great too)
2 onions, sliced
½ pound mushrooms, sliced
2 Serrano peppers, finely chopped
2 tablespoons cooking oil
2 teaspoons Emeril’s Essence
1/4 teaspoon ground cumin
juice of 1 lime
2 tablespoons butter, melted

Serve with:
Whole-wheat flour tortillas, warmed
Grated cheese
Diced tomatoes, Pico de gallo or salsa
Freshly sliced avocado
Cilantro
Lime wedges

Directions:
Heat the 2 tablespoons of oil in a large sauté pan over medium-high heat. Once the oil is hot toss in the sliced onions and bell peppers. While those are cooking mix together the spiceswith the juice of 1 lime and 2 tablespoons of melted butter in a small bowl. Once the peppers and onions are starting to brown add the mushrooms and spice mixture. Cook for 3 – 5 more minutes and then serve with warm tortillas and other toppings of your choice.

Yield: 4 – 6 servings


Flour Tortillas- so good!!



Ingredients:
2 1/2 cups whole-wheat flour
1/2 cup oil (I used canola oil)
1 teaspoon salt
1 cup warm water (heat in the microwave for 1 min)

Directions

In the bowl of a heavy-duty mixer set with a dough hook, pour in the flour, oil and salt. Beat with the paddle until crumbly, about 3 to 5 minutes. Scrape the sides as needed. If your hand-held mixer comes with dough hooks those can be used as well.

With the mixer running, gradually add the warm water and continue mixing until the dough is smooth, about 3 minutes.

Take out the dough and divide it into 12 equal sized pieces. I do this by rolling out a log shape that is about 8 – 10 inches long. Then I cut it in the middle. Then I cut each of those pieces in the middle and so on until you have 12 pieces.
Roll each piece into a ball and flatten it out on a baking tray or board. Cover with plastic wrap and let rest at room temperature for at least 15 minutes or up to one hour.

Heat a cast iron skillet, griddle or 12-inch skillet over med-high heat. The pan should be fairly hot before you begin cooking the tortillas.

On a lightly floured board or countertop, roll each ball into a 8 to 10 inch circle (measure against your recipe if printed on a 8.5X11 sheet of paper). Be careful not to use more than a teaspoon or two of flour when rolling out each ball of dough because too much excess flour will burn in the pan.

Spray the pan with cooking spray and then carefully transfer each tortilla, one at a time, to the pan and cook until puffy and slightly brown, about 30 to 45 seconds per side. Set aside on a plate to cool slightly. Eat within an hour, refrigerate or freeze.

Playing a little catch-up

I'm a little behind on posting about our recent visitors, my sister-in-law and nephew! Taylor and Cade came to stay with us for a couple of weeks and it was SO much fun spending some quality time with them. One of the highlights was taking them to the Ft. Worth Zoo and then to Joe. T's for lunch.

Bon Iver & Kathleen Edwards


David and I went to the Winspear Opera House on Monday night to see Bon Iver. The show was incredible!! Complete with 9 musicians on stage!



We also fell in love with the opening act, Kathleen Edwards. She was so talented. She played acoustic guitar, electric guitar, the violin and the piano. I mean really? Not to mention, her voice was so pure.


Look who I ran into at the concert! Hannah and her hubby came in from Waco. So glad I got to see y'all briefly!

Two- Ingredient Pumpkin Muffins

These are delicious! I made them this weekend and they were a big hit in our house.



Seriously, only two ingredients! No eggs, water, oil etc.



Bake them at 350 for 20-25 min. Sprinkle with powdered sugar and serve warm!

A Weekend of Accomplishments!

This past Labor Day weekend was one for the books! After getting off work on Friday we hopped in the car and drove to Waco to watch the BU vs. TCU game. You may not know this but the bears WON! 50-48!! It was truly the best Baylor game I've been to. Accomplishment #1.


Saturday, I attended my first ever Zumba class. Accomplishment #2. This was an accomplshment for me! It was tough but super fun!

After some George's food and catching up with our friends, David and I headed down to Austin, Texas. We had a great date night complete with a yummy dinner, some live music and Amy's Ice Cream. Probably not Accomplishment #3...but we'll go with it.



The BIGGEST accomplishment of the weekend however, was David participating and completing his first ever sprint triathlon!! I am so proud of him!!

We got up at 5:30am and headed to the race. His age group did not officially start until about 9:15am but it was pretty incredible to watch the olympic distance participants!

He started the race with a 1/2 mile swim in Town Lake. That's his group on the dock with the green caps about to jump in the water. (Click photos to make them larger)

Then he jumped on his bike for a 16.8 mile bike ride!

After that he ran a 5K or 3.1 miles.

The Smile On My Face

The smile on my face right now is from an amazing dinner last night with two of my dear friends, Daryn and Maggie.


Even though my birthday was two weeks ago, they still wanted to go to dinner and make me feel special. Thank you girls!!


We went to Rise off Lovers and Inwood. Um, if you have not gone yet you need to do so now. The food is to die for.


It's this cute and quaint Country French restaurant and their specialty is souffles. YUM.


And I know you're thinking, "that does not look healthy." However, that souffle right there was the Grand Marnier souffle and it was only 113 calories! For that huge thing! Split three ways, that's my kind of dessert!

I got the crab souffle and it was only 312 calories and I could not eat it all. Anyways, it was delicious.

We also got to see President George Bush and his beautiful wife, Laura. How cool is that?!

The smile on my face is also because college football is back and I cannot wait to see the bears play TCU this weekend.
