It's just the two of us this year. That's right, just David and I. Why, you might ask? Well our immediate family lives in: Utah, Colorado, New York, Arkansas, Oregon, Boston and California. Whew. Did you notice I did NOT say Texas??
Because of this geographical separation and the sky high flight prices during Thanksgiving, we decided to stay home.
I've REALLY been struggling with what we should eat for Thanksgiving since it's just the two of us. Traditionally in my family all the recipes feed 6-8 or more! So, it's hard to figure out what we should do for just two.
Here's our menu.
Starter: Butternut Squash Soup

Main Course: Roasted Brussels Sprouts

Pumpkin Risotto topped with Goat Cheese and Bacon by Giada DeLaurintiis

Two fillets from a local butcher, grilled.
David's favorite desert: pumpkin pie with homemade whipped cream
